Apricot and date bliss balls (nut free)

These are a perfect “treat” for lunchboxes and have a real kick of energy and nutrients! I recently made a batch of these up to take away with us on holidays, and they were eaten for breakfast, snacks and dessert!! Chia seeds are a powerhouse of good stuff, and being nut free they are perfect for school.


200g (7oz) dates
100g (3.5oz) dried apricot (preservative free preferred)
100g (3.5oz) sunflower seeds
50g (2oz) chia seeds
1-2tbsp coconut oil
Pinch salt

Blitz in your food processor till mixture becomes sticky (about a minute speed 7-8).
Form into balls and keep in refrigerator for a few days. Makes about 24-28 depending on size.
