Bacon, olive and tomato pasta salad (gluten free)


250g (raw weight) gf pasta
1/4cup extra virgin olive oil
3 full rashers bacon, diced (organic, nitrate free)
1 red onion, sliced
3 tomatoes, roughly chopped
30 kalamata olives, halved
Half a dozen fresh basil leaves finely chopped

Cook pasta, drain and rinse with cold water to halt cooking process. Pour olive oil over pasta, gently mix and set aside.
In a skillet, fry bacon over medium high heat for a few minutes until starting to have some nicely colour, then add onion and continue to fry over medium low heat until onion becomes slightly tender. Add to pasta, along with the rest of the ingredients and mix gently. Serve and enjoy. Xx
