Banana and date spelt muffins (nut free, no added sugar)

My eldest daughter is off to school in just a few weeks!?! Seriously?! I cannot believe this time is upon us. While I tear up over her baby videos, here’s a fab recipe for your lunchboxes!

Makes 18

100g dates
3 bananas (roughly 300g once peeled)
300g wholemeal spelt flour
1 egg
200g milk kefir (…or half greek yoghurt/half milk might work, let me know!)
80g butter
1 tsp vanilla powder
2tsp baking powder
1/2tsp stevia leaf powder (optional)
pinch salt

Preheat oven to 160 degrees fan forced. In a food processor, blitz dates till crumbly (speed 10, 30 seconds). Add in all other ingredients and mix well on medium speed till combined (speed 5, 30 seconds). Spoon into lined cupcake trays and bake for 20-25 minutes until spring back when lightly touched in the centre. Let cool. We serve ours cut into two and spread with a decent amount of grass fed butter.
