Banana, date and walnut loaf (grain free)

This is a really yummy treat for morning tea, or toasted and topped with plenty of butter for a sweet change for breakfast.


70g (2.5oz) dates
120g (4oz) butter/coconut oil, melted
2/3 cup coconut flour (90g)
1/2 cup arrowroot starch (60g)
6 eggs
2 ripe bananas (150g peeled)
1/2 cup + 2 tbsp milk (dairy, almond etc)
1tsp cinnamon
2 1/2 tsp baking powder
1/3 cup chopped walnuts
Pinch sea salt


Preheat oven to 160 degrees fan forced (320F). In a food processor, blitz dates till finely chopped (speed 9, 10 seconds). Add in all other ingredients except walnuts and process till fully combined (speed 5, 20 seconds). Add in walnuts and fold through (speed 3, 10 seconds). Bake for 50 minutes in a lined loaf pan until a skewer inserted comes out clean (longer for a glass loaf pan).

    Hi, I look forward to cooking this recipe however, I have tapioca starch- would this work the same as the arrowroot starch?
