Cheesy spelt crackers

These little guys are so good to have on hand in the freezer. We don’t consume too many grains, but on the occasion that we need some crackers, or some variety in lunch boxes they are a much better choice than the rubbish available in supermarkets. Simple, fun and tasty. That’s my kind of cooking! This is a great recipe to get your kids involved with rolling and cutting the dough. This recipe was spread over 3 baking trays for me.

Cheesy spelt crackers (makes 75 4cm diameter crackers approx)

200g cheese
200g spelt (I use half wholemeal and half white)
80g butter
50ml water
1/2tsp sea salt

Preheat oven to 180 degrees fan forced. In a food processor (or by hand) grate cheese (speed 7, 15 sec). Add all other ingredients and combine till dough ball forms (speed 4, 20-30seconds). Roll out on a floured surface to 2-3mm, cut into desired shapes and place onto lined baking tray (I love those trays with all the little holes). Bake for 15-17 minutes (or until golden and crisp). Let cool on a wire rack. Great to freeze.
