For anyone who has been following me for a while now, you know I’m a fan of easy. I might cook a complex dish here and there for special occasions, but for our day to day stuff, just give me quick, easy and as little mess as possible. These “bites” are perfect. The salty bacon and cheese is complemented beautifully with sweet little pops of the corn kernels. If you don’t have a high powered food processor, just grate everything by hand and mix in a large bowl.
500g chicken mince
2 cloves garlic
150g tasty cheese
3 rashers bacon
1 corn cob, kernels removed
1Tbsp coconut flour
Preheat oven to 200 degrees fan forced.
In your food processor, add cheese and garlic to finely grate (speed 8, 10 seconds)
Add in bacon, zucchini and carrot then blitz again till processed to a fine consistency (speed 7, 10 seconds)
Add in mince, egg, corn kernels, coconut flour and seasoning and gently mix till well combined (speed 3/4, 30 seconds)
Spoon tablespoons of mixture onto a lined baking tray and bake for 20 minutes. (LOVE not even having to get your hands dirty!!!)
