Another perfect addition to your lunchbox rotation! Quick, tasty and packed with long lasting energy.
500g chicken mince
1 spring onion
25g semi dried tomatoes (no oil)
100g full fat feta cheese
1tsp salt
1/4tsp pepper
coconut oil/ghee for frying
In a food processor, blitz sundried tomatoes until finely diced (speed 9, 20 seconds). Add in spring onion and blitz again (speed 7, 4 seconds). Add in all other ingredients and mix well on a low speed (speed 4, 15 seconds). Fry over medium heat, turning occasionally until golden and cooked through (approx 10 minutes). Alternatively, bake at 220C for roughly 15minutes.
