Choc mint slice (grain free/nut free)

My life pretty much revolves around butter, cream cheese and chocolate. Here’s just another example of this. 😉 One word to describe this slice: heavenly.

I use granulated stevia in my recipes generally to keep the carbs lower, however feel free to replace with rapadura/coconut sugar.

Makes approx 25 slices

Base:

1/2 cup + 1tbsp coconut flour
1/4 cup cacao powder
2 eggs
200g butter, melted
1tbsp naturally sweet stevia (approx equiv to 1/2 cup of sugar)

Mix all ingredients well in a food processor, spread into the base of a lined 8×8 dish, flatten with wet hands and bake at 160 degrees for about 15 minutes. Let cool completely.

Mint filling:

100g coconut oil
150g cream cheese (room temp)
1tbsp naturally sweet stevia
1/2-1tsp peppermint extract

In a food processor, mix on low speed till smooth (speed 4, 2 minutes). Spread over cooled base and refrigerate immediately to set.

Chocolate ganache drizzle:

50g 70% or higher dark chocolate
20ml cream

In a double boiler melt chocolate and cream until smooth. Drizzle over the mint filling and refrigerate until ready to serve. Slice with a hot knife.
