Chocolate hazelnut spread

Sometimes life calls for a little chocolate. Like today, when the kids are constantly argueing or crying or not listening. When you can’t go outside to run out the crazies because it’s raining. When you are so darn tired from everyone pulling on every fibre of your being. It’s these days that this comfort food comes in handy…..and…..well for any other day in between. 😉


2 cups hazelnuts
125g coconut oil or butter or ghee (or a mix of both is nice too, depending on your circumstance)
1/4 cup raw cacao powder
2 tbsp naturally sweet stevia
1/4 tsp salt

Preheat oven to 180 degrees. Roast hazelnuts on a tray for 10-12 minutes or until the skins start to crack. Remove from oven and let cool slightly. With a clean tea towel rub the skins off the hazelnuts (the skin can be bitter, but you don’t need to be too pedantic about it or anything). In a high powdered blender blitz roasted hazelnuts until they form a smooth creamy butter (I actually wish I did this batch longer, but the baby needed me). Keep blitzing and scraping, blitzing and scraping. The longer you go, the smoother it will be because more oils are being released from the nuts. I like to do 30 seconds at top speed then scrape down and repeat over and over and over again….trust me, it’s worth it. Once the hazelnut butter has formed, add in all other ingredients and blitz well for a minute or so until all combined. Store in a sterilised jar in the fridge (it will go quite firm). And thats it!! So simple and delicious!! If you want it as a “dip” for fruit, simple warm up in a hot water bath for a few minutes. Or just do what I do and eat it straight from the jar tablespoon by tablespoon 😉
