Coconut lime cupcakes

A sweet treat with a little bit of zing!

120g (4oz) butter/coconut oil, melted
1/3 cup arrowroot starch
3/4 cup coconut flour
1/2 cup honey/rice malt syrup
40ml (1.5 fl oz) lime juice (4 small limes)
zest of 1 lime
6 eggs
1/2 cup milk (dairy/non-dairy)
1/4 cup cream
2tsp baking powder
Pinch salt

Preheat oven to 160 degrees (fan forced, 320F) and line a 12 cup cupcake tin. Combine all ingredients into a food processor and mix till combined (speed 5, 30 seconds). Bake for 25 minutes until lightly golden. Cool on a wire rack.

Icing:

250g cream cheese (8.5oz) room temp
3Tbsp honey/rice malt syrup
3Tbsp cream
1/8tsp vanilla powder

Combine all ingredients in a food processor and blitz on low speed till combined. Pipe onto cooled cupcakes.
