Lamb and rosemary shish kebabs

Fun and easy lunch!
Ingredients
  • 500g lamb mince
  • 1 smallish spanish onion
  • 1 clove garlic
  • 1tsp salt
  • ½tsp black pepper
  • 1tsp rosemary
  • 1tsp parsley
  • Pineapple chunks
  • Capsicum chunks
  • Squeeze of lime juice for serving
Instructions
  1. Preheat oven to 220 degrees (fan forced)
  2. Soak wooden skewers in water for at least 15 minutes.
  3. In a food processor, blitz onion and garlic until finely diced. (speed 7, 5 seconds)
  4. Add in meat and spices and mix gently. (speed 4, 20 seconds)
  5. Form meat into golfball sized meatballs, and thread onto skewers alternating with the pineapple and capsicum chunks.
  6. Bake for 10-12 minutes on a lined baking tray.
  7. Enjoy with a squeeze of fresh lime juice.
