Speedy breakfasts or snacks with a nice protein kick.
2 shallots
6 eggs
4 rashers nitrate free bacon
60ml cream
60g tasty cheese
1/2tsp baking powder
1 tbsp coconut flour
Preheat oven to 170 degrees fan forced. Grated cheese (speed 7, 10 seconds). Add in bacon and shallots until roughly chopped (speed 5, 5 seconds). Add in all other ingredients and slowly mix (speed 2/3, 15 seconds). Pour evenly between a 12 cup silicone muffin tray and bake for 20 minutes.
