This gorgeous pizza-inspired slice is a fab quick meal or lunchbox hit! Feel free to make it into muffins, decrease the cooking time to about 20 minutes.
1 spanish onion, diced
2 rashers bacon, diced
1 medium zucchini, grated
2Tbsp tomato paste
1x 400g tin organic diced tomatoes
1/2 cup sliced olives
1.5 cups grated cheese
Preheat oven to 160 degrees fan forced. In a medium frying pan, sautee onion and bacon in butter for 5 minutes until fragrant. Add in tomato paste, tinned tomatoes, zucchini and olives, allow to simmer for a minute or two. Pour tomato mixture into a 16×8 baking dish and set aside. In a clean bowl, crack in eggs and add salt, pepper and herbs. Gently break yolks and only lightly mix with a fork (I love having some yolk and white texture still discernible in the slice, whisk to your liking). Over the tomato mixture, spread grated cheese then pour over egg mixture. Give the baking tray a jiggle to ensure the egg mixture gets all down into the tomato. Bake for 35-40minutes, let sit for at least 15 minutes before slicing. Keep in the refrigerator.
