Roasted pumpkin breakfast slice

My husband has to go away a bit for work, so that means being at home with 3 kids on my own. Often, there may not be a window to eat breakfast in between feeding the big girls, breastfeeding the baby, hair brushing, preschool trips, washing etc etc etc. So having this cooked and ready to go on busy mornings is wonderful!


1 cup roasted pumpkin cubes
1 Tbsp butter
1 clove garlic, peeled
1 small onion, peeled and quartered
2 rashers bacon
1 medium red capsicum, deseeded
5 eggs
1/3 cup cream
1/2 cup grated cheese
1tsp mixed herbs
salt and pepper

In your Bellini/TMX chop garlic (speed 7, 5 seconds) then onion, bacon and capsicum (speed 5, 7 seconds). Scrape down sides, add in butter and saute (speed 1, ST setting, 5 minutes). Add in eggs, cheese, herbs and cream and mix lightly (speed 3, 15 seconds). Pour into a greased 8×8 pyrex dish and top with roasted pumpkin. Bake in a 180 degree (fan forced) oven for about 30minutes.
