This chicken goes fab over grilled vegetables or a salad. It’s really simple to prepare, and cooks in only a few minutes. Hope you enjoy.
1kg chicken, cut into strips (I chose to use thigh)
2 garlic cloves
2tsp tomato paste
1Tbsp smoked paprika
1/2tsp ground coriander
1/4tsp ground cloves
1/2tsp cayenne pepper (or up to 1tsp if you like it with more heat)
1/2tsp black pepper
1 lime, juice and zest
1/4cup olive oil
Blitz all items for marinade and then coat chicken strips. Let marinade at least a few hours, or overnight. Pan fry over medium-high heat, top with diced spring onions when the chicken is just about ready so they cook only a small amount, and serve.
