I make up a batch of this once a week or so. It’s great over organic corn chips as nachos, as lettuce burritos, or topped over some sweet potato mash. I use organic grass fed mince I purchase here. They sell Australian, organic, grass fed meat at comparable prices to what you will find in the supermarkets, and you can score free delivery if you order 2 full boxes.
1kg (2.2lb) grass fed mince
1 large onion diced
4-6 cloves garlic diced
1x 400g (14oz) tin organic diced tomatoes
1 small tin tomato paste
2 carrots, blitzed in food processor
2 capsicum, blitzed in food processor
cayenne pepper (to taste, I use about 1/4 tsp)
1/2tsp pink salt
2Tbsp coconut oil
In a large frying pan over medium-high heat, brown onion, garlic and mince with the coconut oil. Once browned, add in spices to taste and fry to develop flavours for another few minutes. Add in tomatoes, tomato paste, salt and other vegetables and continue to cook for a further 5-10 minutes (at a minimum. Cooking over low heat for longer will allow the mince to become even better!)
Last night we had it like this, as nachos (Macro organic corn chips), and tonight as lettuce burritos topped with sour cream. Feel free to sprinkle some vital veggie powder on top for an extra veggie boost too!
