Sweet and spicy pineapple chicken

Perhaps one of our favourite, kid-friendly cuts of chicken?! Drumsticks are always a hit around here, never failing to satisfy the hungry little mouths. This dish packs a punch with flavour, and only takes a minute or two to prepare. Simple and tasty is always a winner for me!


1kg chicken drumsticks
1Tbsp butter
440g tin crushed pineapple
4 cloves garlic
4cm chunk of ginger
2Tbsp soy sauce
2tsp vinegar
1tsp paprika
1/2tsp ground cumin
1/4tsp cayenne pepper
1Tbsp brown sugar
salt and pepper

In a food processor, blitz garlic and ginger, then adding all other sauce ingredients and pulse till combined yet still chunky. In a large frying pan over high heat, brown drumsticks with the butter until there is some serious colour on them. Pour over sauce ingredients, bring to a simmer, cover, and cook over low heat for around 20 minutes. Remove lid and cook for another 20 minutes or so until sauce has reduced to a thick, sticky, darkened delicious mess around the chicken.
